I lb. Pork Cubes
1/2 c. flour
1 c. chopped chilies
1 chopped jalapeño (if you like more spice)
2 15 oz. cans whole or diced tomatoes
1 chopped onion
1 1/5 tsp. chopped garlic
1 tbsp. salt
1 tbsp. finely chopped cilantro
3 or 4 c. water

Fry 1 lb. pork cubes in bacon grease or oil until browned. Add flour or more for thicker chili and stir until browned. Add chopped chilies (12-15 Anaheim peppers roasted with peeling, seeds and stems removed) and if you like, you can add 1 chopped jalapeño for more spice. Add cans of whole or diced tomatoes.
In separate small skillet, sauté chopped onion in oil. Add to large pot along with chopped garlic, salt, chopped Cilantro, and water.
Boil on medium-low heat for 20-30 minutes, stirring occasionally.
