3 c. all-purpose flour, divided
1/2 c. oats
1 tsp. salt
1/3 c. honey
2 T. Dijon mustard
2 T. butter, softened
1 pkg. active dry yeast
1 c. hot water
1 large egg
1 egg white, beaten
1 T. water
Oats for topping

Directions:
Directions:
Mix half the flour, 1/2 c. oats, salt, honey, mustard, butter and yeast in large bowl. Add 1 c. hot water. Beat with an electric mixer, increasing speed, for two minutes. Beat in egg. Stir in remaining flour to make a manageable dough. Knead 10 minutes on lightly floured surface. Place in greased bowl, turning greased side up. Cover and place in warm place until doubled in size, approx. 1 hour. Grease pie pan. Punch down dough, shape into a ball, and place in pan, flattening slightly. Mix egg white with water and brush over loaf. Sprinkle with oats. Cover and let rise again until doubled. Bake at 375ºF for about 35 minutes or until deep golden brown.
Cool on wire rack.
