2 C. flour
1/2 C. firmly packed brown sugar
1 C. softened butter
2 packages (8 oz) softened cream cheese
1/2 C sugar, plus 2 T
2 large eggs
1 t vanilla extract
3 Granny smith apples (peeled, cored, and chopped finely)
1/2 t ground cinnamon
1/4 t ground nutmeg
1/2 caramel topping

Directions:
1. Crust: Preheat the oven to 305º . In a medium bowl, combine flour and brown sugar. Cut in the butter with a pastry blender until the mixture is crumbly. Press it evenly into a 13" by 9" by 2" baking pan lied with heavy-duty aluminum foil, & bake it for 15 minutes (or until lightly browned).
2. Cheesecake filling: In a large bowl, beat cream cheese with a 1/2 C sugar with an electric mixer at a medium speed until it's smooth. Then add the eggs (1 at a time), & the vanilla. Stir to combine. Pour over the warm crust.
3. Apple Topping: In a small bowl stir together the apples, remaining 2 t of sugar, cinnamon, and nutmeg. Spoon it evenly over the cream cheese mixture. Bake for 30 minutes, or until the filling is set. Drizzle the caramel topping on top.
