1 lb hamburger
1/2 c. onion, chopped
Any vegetable you have on hand
about 1 c. water
1 bouillon cube
Salt and pepper to taste

Cook the hamburger and onion in a large frying pan. Drain. Add the water and bouillon cube. Add the raw, chopped vegetables. Simmer until the vegetables are tender.

My French Canadian neighbor gave this recipe to me. Hers is rather sweet-- I don't remember the spice she puts in to make it that way, but since we don't like sweet meat around here, I put in the bouillon cube. Fricassee is a traditional poor man's meal. I usually use potatoes, carrots, celery, mushrooms, corn, beans, peas.... anything I have on hand or in the freezer. It ends up being rather juicy, so serve it with a nice, crusty bread.
