1 can (16 oz) roasted eggplant
2 cloves garlic (minced)
1 small lemon juiced
1 tsp salt
1/2 cup tahini (sesame paste)
2 tbsp plain yogurt
2 tsp chopped Parsley

Directions:
Directions:
In a medium mixing bowl add eggplant, salt, lemon juice, garlic and yogurt, stir with a fork.
Add tahini paste and mix well.
If the mixture is too loose add more tahini or to thicken add more yogurt .

Pour in serving bowl and garnish with parsley sprigs.
Serve with pita wedges on the side


If you want to use fresh eggplant:

2 large eggplants

Cut in halves and place on a baking sheet and bake in the oven at 450 degrees for 25-40 minutes
Once eggplant is fully cooked through let it cool down and then scoop out the inside and continue with the recipe above.

Cooking time depends on the size of your eggplant.
