8-9 slices bacon, fried crisp, crumbled and set aside
2 Tbsp. bacon drippings
2 lbs. baby potatoes (any kind will do) Rinse, dry and halve
1 large red onion, diced into 1/2 cubes (2 cups)
1/4 cup + 2 Tbsp. chopped fresh sage
1 Tbsp. butter, melted
Coarse kosher salt
Freshly ground black pepper

1. Preheat oven to 375º.

2. Cook bacon in large skillet and set aside.

3. Combine potatoes, onions, 1/4 cup sage leaves, melted butter and 2 Tbsp. bacon drippings. Sprinkle generously with kosher salt and freshly ground black pepper. Toss to coat.

4. Spread potato mixture evenly on a baking sheet. Roast 1 hour, stirring midway through.

DO AHEAD: Can be made 2 hours ahead. Let stand on baking sheet at room temperature.

5. Increase oven temp to 400º. Stir bacon into potato mixture and continue to roast until potatoes are tender and beginning to brown, about 15 minutes. Transfer mix to large serving bowl. Season to taste and sprinkle with remaining 2 Tbsp. chopped sage leaves and serve.
