3 Tbsp. oil
4 lbs. choice grade chuck, cubed
1 white onion, chopped
6 cloves garlic, minced
2 cups chopped, canned tomatoes
3 ancho chilies
16 de arbol chilies
12 chipotle chilies
3 pasilla negro chilies
3 guajillo chilies
3 habanero chilies, rehydrated in hot water until soft
2 tsp. cinnamon
2 tsp. each Mexican oregano, thyme, cumin, salt, and pepper

Directions:
Directions:
Heat oil in a stockpot and brown beef with onion and garlic. Blend all other ingredients and add to stockpot. Stew until meat falls apart. Serve with tortillas and sour cream on the side.
