1 egg
1/2 tsp. salt
1 lb. lean boneless pork
3 green peppers
1 can pineapple chunks
2 1/2 soy sauce
1/4 cup vinegar
2 small tomatoes
2 Tbsp. flour
1/8 tsp. pepper
3 Tbsp. oil
1 1/4 cup boiling water
2 1/2 Tbsp. cornstarch
1/4 cup sugar
1/2 cup pineapple juice

Beat egg with flour, salt and pepper. Coat pork and brown in oil on all sides. Reduce heat and simmer 30 minutes. Add water when needed. Cut peppers in strips, parboil for 10 minutes, drain. Drain pineapple, save liquid, and add both ingredients to meat. Cover and simmer 10 minutes. Blend cornstarch and soy sauce in saucepan. Add sugar, vinegar and pineapple juice and 1/2 cup water. Cook, stirring constantly until clear, about 2 minutes. Pour over meat, add tomato wedges and simmer 5 minutes. Serve over rice.
