1 lb. ground beef
1 dozen corn tortillas
1 (10 oz.) can enchilada sauce
1 lb. grated cheddar cheese
1 chopped onion
1 can olives (opt.)

Directions:
Directions:
Fry and season ground beef; mix with cheese, onion, and olives in a bowl. Heat tortillas in oil to make them soft. Put enchilada sauce in a bowl. Dip tortillas in the sauce. Fill each tortilla with meat mixture, roll and place in oblong baking dish or pan. Pour remaining sauce over the top, and sprinkle with more grated cheese. Bake at 350º for about 20 minutes.

OPTIONAL COOKING DIRECTIONS: Instead of rolling enchiladas, layer tortillas in the 9x 13 pan. Add 1/2 ground beef mixture, 1/2 the cheese. Repeat layering ending with cheese. Cover and bake 350º for 30 min.
