1 lb. London Broil, or similar roast
2 Tbsp. lemon juice
3 cloves garlic, crushed
1 onion
1 bell pepper
3 Roma tomatoes
1/2 cup or more salsa
Salt and pepper to taste
2 tsp. cumin
Oil
1 can diced green chilies ( if you want it hotter, add jalapeno chilies)
1/2 lb. shredded cheese (optional)
Avocado (optional)
Sour cream (optional)
Flour tortillas

Directions:
Directions:
Slice meat into thin strips across grain of meat. Slice onion and bell pepper into thin strips. Cut tomatoes into large pieces. Add all to a bowl and add cumin, garlic, lemon juice, salsa, and salt and pepper.
This mixture can marinate in refrigerator overnight if you want.
TO COOK: Add 1-2 Tbsp. oil to fry pan. Heat pan very hot. Add a small amount of fajita mix to the pan and cook just until meat is done, vegetables should be crunchy still.
Place on flour tortilla and garnish with cheese, sour cream, and avocado if desired.
