4 chicken breasts, washed
1/2 cup butter
1/2 cup onion, chopped fine
1/2 cup celery, chopped fine
1 tsp. sage
1 tsp. poultry seasoning
1 tsp. thyme
Salt and pepper to taste
2 cups bread crumbs coarsely crushed
1/2 cup rice
1 1/2 cup chicken stock
1 cup sour cream
1 can cream of chicken soup
1/2 cup onion minced
1/2 lb. mushrooms, sliced
2 Tbsp. butter

Directions:
Directions:
In a pan, melt 1/2 cup butter. Saute the 1/2 cup onion, celery, sage, poultry seasoning, thyme, and salt and pepper. Stir in bread crumbs and set aside.
Bring the 1 cup of stock to a boil. Add rice and cover. Cook on low for 20 minutes. Spread cooked rice in bottom of a casserole dish.
Pound chicken breasts until flat. Place a generous 1/4 cup stuffing on each breast and roll up. Secure with a toothpick. Place rolled chicken breast on top of rice. Mix the sour cream, cream of chicken soup, and 1/2 cup chicken broth together. Pour sauce over chicken breasts ( it can cover rice, too).
Melt the 2 Tbsp. butter in a fry pan and saute 1/2 cup onion and mushrooms. Sprinkle Garnish on top. Cover and bake at 350º for 45 min., or until breasts are done.

VARIATION: Replace rice with mashed potatoes.
