4 c baby spinach
4 tilapia fillets
8 t olive oil
8 oz thin asparagus, trimmed & cut into 2" lengths
4 t capers
4 t minced shallots
1 t chopped thyme leaves
1 t salt
1/2 t pepper
8-12 thin slices of lemon

Directions:
Directions:
Heat oven to 425º. Tear off 4 sheets of parchment paper.

To make a packet, place 1 c spinach in the center of the parchment paper. Top with a tilapia fillet. Brush the fish with olive oil. Scatter 1/2 c asparagus on fish. Scatter 1 teaspoon each of the shallots and capers. Sprinkle thyme on top. Drizzle with another tsp of olive oil. Salt and pepper to taste. Top fish with 2-3 slices of lemon.

To fold packet, bring long ends of paper together and fold down three times to make a seam. Place on rimmed baking pan and fold and tuck the ends underneath. Make the 3 other packets the same way.

Bake 15 minutes until packets are puffed.
