2 small yellow squash (thinly sliced)
2 small zucchini (thinly sliced)
1 med tomato, seeded and chopped
1/4 c. sliced olives
2 T chopped green onion
-----
2 tsp. olive oil
1 tsp. lemon juice
3/4 tsp. garlic salt
1/4 tsp. dried oregano
1/8 tsp. pepper
---
2 T grated Parmesan cheese

Directions:
Directions:
Layer the first 5 ingredients. Make the sauce and pour over the top of the layers. Cover with plastic wrap and cook in microwave for 10 minutes. Pull out, unwrap, and sprinkle with Parmesan cheese.
OR, put the ingredients in a foil packet and place on the grill.

My, oh, my! This is my new favorite way to use zucchini! I like to double the sauce and sprinkle on however much Parmesan I like, which is usually a lot.
