•6 ounces flavored croutons
•1/4 teaspoon ground black pepper
•1/4 teaspoon cayenne pepper
•1/2 teaspoon chili powder
•1/2 teaspoon dried thyme
•1 small onion
•3 peppers (green, yellow and/or red)
•3 whole cloves garlic
•1/2 red bell pepper
•1 pound ground sirloin or buffalo
•1 tsp salt
•1 egg

For the glaze:
•1/2 cup catsup
•1 teaspoon ground cumin
•Dash hot sauce
•BBQ sauce (see note)
•1 tablespoon honey

Pre-heat oven to 325º.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder and thyme. Pulse mixture until fine. Place into a large bowl. Combine the onion, peppers and garlic in the food processor. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground meat and salt with the bread crumb mixture. Add the egg and combine thoroughly. Pack this mixture into a loaf pan to mold the shape of the meatloaf. Cook for 10 minutes. Then, remove from oven and brush on the glaze. Cook for another 35 minutes.
