2 cups sugar
2 cups Karo
Pinch of salt
3 cups heavy whipping cream
1 can sweetened condensed milk
A little butter for the pan

In heavy saucepan (non-stick would be best) pour in the sugar, Karo, and pinch of salt. Bring to boil over med-high heat, stirring frequently over with a large, melt-proof rubber scraper. Boil until the mixture starts to change color to golden brown. Be patient, it takes a long time.

(You can start this next step while you're bringing your sugar and karo boil on the stove.) Combine the whipping cream and s.c. milk in a microwave safe bowl, stir and put it in the microwave until it's really hot but not boiling.

Add the cream mixture SLOWLY (so the boiling doesn't stop) to the boiling sugars. Stir constantly over medium-high heat until it drops into a firm ball in ice water (232º by thermometer). Again-be patient.

Take off heat and add 1 Tbsp vanilla and nuts if you want them.

Pour in buttered pan, 9x13 or a cookie sheet for thinner caramels. Cut when completely cool.

Word of advice. . .be very careful making these. If your rubber scraper falls in the pot, don't reach in to grab it. Use tongs or something else to get it out. Sadly, I speak from experience.
