1 lb. dried cheese tortellini
8.5 oz. jar julienne-cut sundried tomatoes, with herbs
Juice of 1 lemon
2 cloves garlic, minced
1/2 tsp salt
1 tsp freshly ground pepper
8 oz. marinated artichoke hearts, drained
1/2 cup pine nuts, toasted
fresh basil

Directions:
Directions:
Cook pasta according to package directions, drain and cool. Drain tomatoes, reserving 1/3 cup oil
In large mixing bowl, combine reserved oil, lemon juice, garlic, salt and pepper. Whisk to combine. Add tomatoes, artichoke hearts and pine nuts to oil mixture. Add tortellini and toss to combine.
