2 lb. veal scallops
1/4 c. flour
6 T. butter, divided
1/2 lb. mushrooms, sliced
3/4 c. champagne
1/4 t. sage
1/4 t. marjoram
1 1/2 c. heavy cream
3/4 t. salt
1/8 t. pepper

Directions:
Directions:
Dust veal with flour. In a large skillet, saute veal in 4 T. butter for 2 minutes on each side or until lightly browned. Transfer to a dish and keep warm. Add 2 T. butter and saute mushrooms for 2 minutes. Transfer to dish with slotted spoon and keep warm. Add champagne, sage, and marjoram to the butter and cook until reduced by half. Add cream and cook until reduced by 1/3. Add salt and pepper and return veal and mushrooms to the pan. Simmer for a few minutes and serve.
