3 cups of flour
2 cups of sugar
2-4 tbsp cinnamon
1 tsp salt
1 tsp baking soda;
1/4 tsp baking powder
1/8 tsp of nutmeg
1/8 tsp of allspice
2 1/2 cups of mashed ripe bananas
3 eggs
1 cup of canola or vegetable oil
2 tsp vanilla extract
1 tsp banana extract
1 cup chopped pecans (or other nut or miniature chocolate chips). We make some with pecans and some with the chocolate chips.

Optional crumb topping:
1 tbsp of flour
3 tbsp of brown sugar
2 tbsp of butter
Directions:
Directions:
Mash ripe bananas. Beat 3 eggs until foamy.
Mix all ingredients well. Pour into loaf pans (1-2 depending on desired thickness) or mini-loaf pans (3).
If using optional crumb topping: cut together flour, brown sugar and butter until size of small peas. Sprinkle on top of loafs.
Bake approximately 1 hour at 350º
Cool on racks.

We like the bread with the nuts warm with butter for breakfast and the bread with the chocolate chips cold for dessert.
