½ c. margarine
½ c. sugar
1 egg
¾ tsp. vanilla
1 ½ c. flour
½ tsp. salt
¼ tsp. baking soda

Directions:
Directions:
Mix margarine, sugar, egg, and vanilla. Mix salt, soda, and flour together. Blend with margarine mixture. Mix thoroughly with hands. Refrigerate overnight. Heat oven to 400. Roll dough 1/8-inch on floured board. Cut with 3-inch round cutter. (I use a drinking glass.) Ease into miniature muffin tins. (Make sure you have space left in the middle for filling!) Bake about 12 minutes. The tartlets will tend to rise. Cool and remove from pan. Fill as desired. (I fill with assorted puddings, as well as canned fruit pie fillings. The kids prefer the cherry pie filling. After filling the tarts, serve soon; otherwise, the tarts become soggy. Can freeze the unfilled tarts too.)
