Ingredients: 1 stick butter 1 clove garlic minced 1 tsp. salt 1 1/2 c. milk 1 tsp.. dried oregano 1 c. grated parmesan cheese, divided 4 c. shredded mozzarella cheese, divided 1/2 tsp. pepper 1 tsp. minced parsley 2 c. cooked, cubed chicken (or browned ground beef) 2 10oz pkg spinach, thawed and well drained 9 lasagna noodles, cooked and drained 1 med onion, chopped 1/2 c. flour 2 c. chicken broth 1 tsp. dried basil 1 15 oz ricotta cheese

Directions:In saucepan, melt butter over medium heat. Saute onion and garlic until tender. Stir in flour and salt; cook until bubbly. Gradually stir in broth and milk. Bring to a boil, stirring constantly. Boil for 1 minute. Stir in 2 c. mozzarella cheese, 1/2 c. parmesan cheese, basil, oregano, and pepper; set aside.
In a bowl, combine the ricotta cheese, parsley and remaining mozzarella cheese; set aside.
Spread 1/4 of the cheese sauce into a greased 13x9x2" baking dish. Cover with 1/3 of the lasagna noodles. Top with half of the ricotta mixture, half of the spinach, and half of the meat. Cover with 1/4 of the cheese sauce and 1/3 of the lasagna noodles. Repeat layers of ricotta mixture, spinach, meat, and 1/4 of the cheese sauce. Cover with remaining noodles and cheese sauce. Sprinkle with remaining parmesan cheese.
Bake, uncovered, @t 350º for 35-40 minutes. Let stand for 15 minutes before cutting. |
