¾ c. margarine
¾ c. sugar
1 egg
½ tsp. vanilla
2 c. mashed ripe bananas
¼ tsp. salt
1 tsp. baking soda
2 c. flour

FROSTING:
6 Tbsp.brown sugar
4 Tbsp. margarine
4 Tbsp. evaporated milk
Confectioners sugar
½ tsp. vanilla

Directions:
Directions:
Bake at 350 for 6-8 minutes. Cream shortening. Add sugar and blend. Add egg, vanilla, and bananas. Add flour, salt, soda. Mix. Place by teaspoon on greased cookie sheet.
Frosting: Bring to boil the butter, brown sugar, and milk. Remove from heat. Add enough powdered sugar to make runny by spreadable. Add vanilla (keep pan over warm water to keep soft). If it gets thick, add hot water. Frost cookies while warm.

I save my ripe bananas just for this recipe! When a banana begins to "rot", I simply put it in the freezer. Keep the peeling on the banana too!
