2 (10 oz.) pkg. frozen chopped spinach, cooked and drained
6 eggs, well beaten
1 large onion, finely chopped
3 c. herb stuffing mix
¾ c. melted margarine
½ c. Parmesan cheese
1 tsp. pepper
Dash of ground nutmeg
½ tsp. garlic
¼ tsp. thyme

Directions:
Directions:
Mix all ingredients. Shape into small balls. Chill for at least 4 hours. Place on lightly greased baking sheets. Bake at 325 for 10-15 minute or until bottoms are starting to brown. Freezes well. Makes lots!

Lemon Mayonnaise:
½ c. mayo
1 Tbsp. fresh lemon juice
1 tsp. sugar
1 tsp. Dijon mustard
Dash of hot pepper sauce
¼ c. sour cream

Mix until smooth. Spear warm spinach balls with toothpicks and dip in lemon mayonnaise.
