2/3 c. olive oil
1/2 c. white balsamic vinegar
1 T. chopped fresh cilantro
2 T. grated lemon rind
1 tsp. salt
1 tsp. freshly ground pepper
1 tsp. hot sauce
1 1/2 lb. peeled, large cooked or fresh shrimp

Directions:
Whisk together oil, vinegar, cilantro, lemon rind, salt, pepper and hot sauce. Place shrimp and mixture in large bag. Chill at least 8 hours, up to 24 hours, turning bag occasionally. Serve on a bed of lettuce.
