2 c. all purpose flour
1 c. butterscotch morsels
1 tsp. baking powder
3/4 c. butter or margarine, softened
2/3 c. sugar
2/3 c. packed brown sugar
1 lg. egg
1/2 C. cooked, mashed pumpkin
1 C. quick-cooking oats
1 C. white chocolate morsels
2/3 C. toasted almonds
1/2 C. coconut

Directions:
Directions:
Preheat oven to 350º. Line cookie sheet with aluminum foil. Combine flour and butterscotch morsels; process in food processor (fitted with steel blade) until morsels are as fine as the flour. Pour into large bowl. Add baking soda, butter, sugar, brown sugar, egg, and pumpkin. Beat until well mixed. Stir in oats, white chocolate, almonds, and coconut. Drop by teaspoons onto foil-lined cookie sheets, about 2 inches apart. Bake 12-14 minutes until golden brown. Remove from cookie sheets and cool on rack.
