Nonstick cooking spray
4 English muffins
1/2 lb. sliced Canadian bacon, halved
1 1/4 c. shredded sharp Cheddar cheese
1/3 c. finely shredded Parmesan cheese
8 large eggs
3 c. milk
1 1/2 T. Dijon mustard
1/2 tsp. coarse salt
Pinch ground pepper
1/4 tsp. Tabasco sauce

Coat a 2 qt. shallow baking dish with cooking spray. Split, toast and cut muffins in half. Alternately arrange muffin halves, cut-side down, and Canadian bacon in dish. Sprinkle with cheeses. Set aside. In large bowl, whisk together eggs, milk, mustard, salt, pepper and Tabasco sauce until combined. Pour over muffins and bacon. Cover tightly with plastic wrap. Refrigerate at least 2 hours and up to overnight. Preheat oven to 350ºF. Place baking dish on a rimmed baking sheet; remove plastic wrap. Bake until puffed and set in the center, about 1 1/2 hours. Tent loosely with foil if it starts to brown too quickly. Let stand 10 minutes before cutting and serving. Serves 6. Prep: 25 minutes. Total time: 4 hours.
