Ingredients: 1 T. Olive Oil 1 Onion, diced 2 to 3 cloves garlic, minced, optional 1 lb. link sausage4, sliced 1/8 inch thick 1 lb penne or other pasta 1 c. red wine 3 beefsteak, or other large fresh tomatoes, cored & chopped 1/2 c. basil leaves, sliced plus 8 small sprigs Salt, freshly ground pepper 1 oz. Parmesan cheese, thinly sliced, or 1/3 c. grated Parmesan

Directions:Heat large pot of water to a boil. Heat olive oil in large skillet over medium heat. Add onion; cook until translucent, 3 minutes. Stir in garlic and sausage. (if using fresh sausage, cook until meat is no longer pink, about 8 minutes; drain.)
Meanwhile, cook pasta according to package directions in the boiling water. Add red wine to skillet. Cook until about 1/4 c. liquid remains, about 5 minutes. Stir in tomatoes; cook until they soften and give up their liquid, 5 minutes. Remove from heat until pasta is through cooking. Stir sliced basil leaves into sauce; season with salt and pepper. Serve over drained pasta; garnish with Parmesan and basil sprigs. |

Notes: Sometimes I will use Del Monte Diced Tomatoes with Basil, Garlic & Oregano for the tomatoes and I'll use Hillshire Farm Lite Polska Kielbasa -- because it has 1/2 the fat and 1/3 fewer calories and 0g total Carbs :)!!
