2 cups Cascade Kitchen Beans
1 (4oz) can diced green chilies
5 cups chicken broth
shredded cheddar or jack cheese
2 cups water
1 1/2 tsp chili powder
1 cup prepared salsa
1 tsp ground cumin
1 cup chopped bell peppers
3/4 tsp salt
1 medium onion - chopped
roasted chicken

Directions:
Directions:
Soak beans by preferred method, drain beans and in a 4 quart cooking kettle, add enough fresh water to cover beans, then simmer covered until beans are tender (approximately 1 1/2 hours). Combine all ingredients except cheese and bring to a boil. Reduce heat and simmer covered for 25 minutes or until beans are tender. Top will shredded cheese and sour cream.
We like to eat ours with tortilla chips.

Another soaking method if you didn't remember to soak them the night before. Beans: Bring 2 cups beans to a hard boil, take off stove and let sit 2 hrs.
