Serves: at least 12 (big pieces)

1 3/4 c. unsifted flour
2 c. sugar
3/4 c. cocoa powder
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. salt
2 eggs
1 c. milk
1/2 c. vegetable oil
1 c. boiling water

Directions:
Directions:
Combine dry ingredients in large mixing bowl and add remaining ingredients EXCEPT the boiling water. Beat at medium speed for 2 minutes. Stir in boiling water (batter will be very thin). Pour batter into 2 greased cake pans (8' or 9") or one 9" x 13" pan. Bake at 350º for 30-35 minutes for the layers or 35-40 minutes for the 9" x 13" pan. Test with knife (clean knife = done cake).

Ice with a very thick layer of cocoa frosting such as:

1 stick margarine or butter
4 T cocoa
5 T milk
3 1/2 c. sifted powdered sugar
1 t. vanilla
1 c. chopped pecans (optional)

Start making the icing about 5 minutes before the cake is done. Melt together and bring to a boil the margarine/butter, cocoa, and milk. Remove from heat and add sugar, vanilla and pecans. Beat well and spread on cake while it is still hot.
