1 (9 in.) pie shell, deep-dish
2 T. minced onion sautéed in olive oil
1 c. cooked, chopped spinach; well drained
Garlic salt, optional
4 eggs
2 c. cream, whole milk or half and half
1/2 tsp. salt
1/8 tsp. nutmeg
Pinch (or more) cayenne pepper
1 c. shredded Swiss cheese, divided
1/2 c. shredded Monterey Jack cheese

Preheat oven to 425ºF. Partially bake pie shell for 11-14 minutes. Mix sautéed onion with drained spinach, add a little garlic salt, if desired. Let cool. Beat together eggs, cream, salt, nutmeg and cayenne pepper. Add 3/4 c. shredded Swiss cheese and all Monterey Jack cheese a little at a time to avoid clumping. Add spinach mixture and mix well. Sprinkle remaining 1/4 c. Swiss cheese onto pie crust, then pour egg mixture into crust. Bake for 15 minutes, then reduce temperature to 350ºF and continue baking for 40-50 minutes. Allow 30-60 minutes to cool before serving. *I cover crust with foil to avoid burning and bake on a baking sheet for spills. There is usually a little too much egg mixture, so I make sure that as I pour the mixture, I also spoon out the vegetables.
