1 stick margarine
1 cup brown sugar
3 T. sugar
2 tsp. vanilla extract
1 egg
1 3/4 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. instant coffee dissolved in 2 T. hot water
8 oz. chocolate chips

Preheat oven to 375º

Cream margarine with sugars until fluffy. Beat in egg and vanilla. Combine dry ingredients and add to cream mixture. Stir in chocolate chips.

Drop by spoonful onto cookie sheet lined with parchment paper. Bake for 8 - 11 minutes.

Personal Notes:
Do not bake for too long cuz they're much better raw and chewy. I keep them in for like 9 minutes. Also, you should probably hide them if you wanna have any left.
