1 qt. milk (low-fat can be used)
1/3 c. regular rice, rinsed
1/4 tsp. salt
2 tbsp. sugar
1/4 tsp. cinnamon or nutmeg
1 tsp. vanilla

Grease 1 1/2 qt. casserole baking dish with butter. Dump rice, sugar, salt and flavorings in dish; blend well. Pour milk into dish; mix thoroughly. Bake for 1 1/2 hours at 325º. Stir after the first 1/2 hour; slight scum forms on top. Stir in, repeat next 1/2 hour. Test rice, continue baking for a 1/2 hour, or until rice is tender. Stirring makes it creamy. Cool completely before serving. It thickens as it cools. Break through topping; include in serving.
