1 cup whole wheat flour
1 cup all purpose flour
2 tsp pumpkin pie spice
2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1 egg
1 egg white
14 oz can pure pumpkin puree
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1/2 cup evaporated skim milk
1 Tbsp vegetable oil
1/4 cup chopped nuts

Directions:
Directions:
Preheat over to 350 F. Grease a 9 x 5 inch loaf pan.
In a medium bowl, stir together the flour, pumpkin pie spice, baking powder, salt and baking soda.
In a large mixing bowl, whisk together the whole egg, egg white, pumpkin puree, granulated sugar, brown sugar, evaporated milk and oil until blended. Add the flour
mixture and stir just until moistened. Pour into the prepared baking pan and sprinkle with the chopped nuts.
Bake for 60 to 65 minutes or until a toothpick poked into he centre of the loaf comes our clean. Let pan cool on a wire rack for 10 minutes, then remove loaf from pan and let cool completely.
