1/2 c. Italian seasoned dry breadcrumbs
2 Tbsp. grated Parmesan cheese
Pinch black pepper
1 egg, slightly beaten
1 Tbsp. milk
3-4 c. fresh vegetables (such as broccoli and cauliflower)
1 Tbsp. butter, melted

Directions:
Directions:
Preheat oven to 400º. Spray a cookie sheet with non sticking baking spray. In a mixing bowl, combine breadcrumbs,, Parmesan cheese and pepper. In another mixing bowl, combine egg and milk.

Toss one cup of the vegetables in the egg mixture. Remove vegetables with a slotted spoon, letting the extra egg drip off, and place into bread crumb mixture. Toss to coat. Place on cookie sheet. Repeat with remaining vegetables.

Bake for about 20 minutes or until golden brown, stirring once or twice.
