1 1/2 cups cubed pork
2 cups chopped mushrooms
1 8 oz. can sliced water chestnuts
1 cup finely chopped carrots, steamed
3 eggs, scrambled
1/2 cup finely chopped celery
1/2 tsp. ground ginger
1 clove garlic, crushed
3-4 Tbsp. soy sauce
1 Tbsp. veg oil
3 small green onions, finely chopped

Directions:
Heat veg. oil in skillet, add pork and braise. Add mushrooms, onions, soy sauce, and garlic, and stir fry until mushrooms and pork soak up quite a bit of soy. Steam carrots and celery in a little water in microwave for 3 to 4 minutes and add to pork mixture. Scramble eggs and add to mixture also. Add water chestnuts. Add ginger and pepper. Stir fry for a couple minutes. Wrap in egg roll wrappers and deep fry till browned. Dip in honey mustard or sweet and sour sauce or serve over rice.
