3 boneless, skinless chicken breasts slow-cooked on low for a few hours in ½ cup green chili enchilada sauce, cubed when done.

1 15 oz. can each drained:
---black beans
---butter beans
---white beans
---great northern beans

2 Tbsp chopped fresh cilantro
2 Tbsp chopped sweet onion
¼ cup salsa verde (optional)
1/8 cup sugar
¼ to ½ tsp. Ground cumin
Salt and pepper
Rest of green chili enchilada sauce until it’s as thick as you want it.

Directions:
Put everything in a pot together, bring it to a boil and let it simmer for a few minutes. You can serve it with a slotted spoon to drain the juice and eat in a tortilla with some cheese. My favorite way is to eat it in a bowl with a big scoop of cornbread on top.
