"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 small bag red potatoes (about 4 cups when cut up)
1 cube margarine or butter
2 tsp. garlic salt
1/2 to 3/4 cup parmesan cheese

Directions:
Directions:
Wash potatoes, then cut into large bite sized wedges (usually fourths, depending on size). Put in a gallon ziploc with about 1/4 cup water in bottom of the bag. Seal ziploc about 3/4 the way. Leave a little not sealed for steam to release. Steam potatoes in microwave for about 10 minutes or until the potatoes are getting tender with a fork. Cut a little corner off the bottom of the bag over the sink to drain water.
Put potatoes and butter in large frying pan over medium-high heat. Stir until potatoes are coated in butter. Then sprinkle the parmesan cheese over the potatoes as well as the garlic salt. Stir to coat. Continue cooking the potatoes, only stirring when one side is well browned. When all sides of potatoes are nicely browned and parmesan crusted, they are done.
