1 1/2 cups warm potato water
2/3 cup sugar
1 1/2 Tbsp salt
1 heaping Tbsp yeast
2 eggs
2/3 cup soft shortening
1 cup warm mashed potatoes
7 - 7 1/2 cups flour

Filling:
Butter
Brown sugar
Cinnamon
Raisins (opt)

Icing:
1/3 c soft margarine or butter
3 cups powdered sugar
3 Tbsp evap milk (regular milk will do too)
1 1/2 tsp. vanilla
1 egg yolk (optional to make it extra smooth)

Directions:
Directions:
Add yeast to potato water and stir until dissolved. Add sugar and salt and mix. Add eggs and shortening; mix with mixer. Add mashed potatoes and mix thoroughly. Add flour; Knead thoroughly. Let rise for at least 2 hours. Roll out dough and spread with melted butter; sprinkle with cinnamon, brown sugar, (and raisins -optional). Cut into rolls with floss or string and shape into rolls. Place on a butter pan(s) and let rise until they are at least double in size.
Bake at 400 degrees for 12 - 15 minutes.
To make icing, blend margarine and powdered sugar. Add milk, vanilla, and egg if desired. Stir until smooth and ice rolls hot out of the oven.
