Salad:

green leaf lettuce
chicken or pork or steak, grilled, sliced
grated cheese
quacamole
tomatoes
Rice (recipe to follow)
Black or pinto beans

Cafe Rio Dressing

1 Ranch dressing packet
1 c. buttermilk
1 c. mayo
2 tomatillos, remove husk, dice
1/2 bunch cilantro
1 clove garlic
juice of 1 lime
can use a jalapeno, chopped or few drops green tabasco sauce
Blend, refrigerate
(Or you can just buy a good brand of ranch dressing and add tomatillos, fresh cilantro, lime juice)

Sweet Pork recipe

Slow cook 2 1/2 lb. pork roast with a couple cans of root beer, pinch of salt, pepper and garlic salt. Drain it, pull the pork, add 1/2 c. green chili sauce (I use Heredo brand) and 1/2 c. brown sugar.

Yellow Rice Recipe

Chop some cilantro
1 can green chilies
3/4 tsp. salt
1 T. butter
1/2 onion
Rice
Chicken broth or those little chicken cubes
Put all with the rice and cook till rice is done.

Get the flour tortillas you cook yourself, then add some beans, rice, pork (chicken or steak), lettuce, cheese, tomatoes, quacamole, dressing. You can sometimes get the little chips for the top at the store.
