3 large Portobello Mushroom caps
2 ounces blue cheese (crumbled)
1/2 cups walnuts (coursely chopped)
Vegetable oil

Directions:
Directions:
Wipe caps clean, brush w/olive oil. Place on baking sheet and bake 3-4 mins. Remove from oven and fill the caps with the walnuts and blue cheese. Bake a few mins until bubbly.

Sometimes I would even add carmelized onions or use gorganzola cheese instead of blue cheese.
