2 large potatoes, peeled and finely grated
1/2 medium onion, peeled and finely chopped
1 egg, beaten
1 Tbsp flour
1/4 tsp salt
oil for frypan

Directions:
Directions:
Wash the grated potatoes in a strainer under running water to remove excess starch. Squeeze out as much of the liquid from the potatoes as possible and put into a large bowl. Add the onion, egg, flour and salt and stir until it is combined.

Heat cast iron fry pan and add 1 tsp of oil. Scoop a 1/2 cup of the potato mixture into the frypan and flatten slightly. Cook until browned on the bottom, then flip and cook the other side. This should take a minute or two. When crisp and golden remove and let drain on paper towels to remove excess oil.

These can be made ahead of time. Stand the latkes on their edges in an 8 or 9 inch square baking pan. Cover the pan with foil wrap and refrigerate until serving time. To reheat unwrap the pan and place in a 350 F oven for 15 to 20 minutes, until heated and sizzling. Serve with sourcream.
