2 tsp olive oil
2 onions, chopped
2 1/2 tsp chili powder
1 can (28oz) stewed tomatoes
1 3/4 cup chicken or vegetable broth
1 can (19 oz) black beans, drained and rinsed
1 1/2 cup kernel corn
1/2 pkg. frozen chopped spinach
2 Tbsp chopped cilantro

Directions:
Directions:
In large heavy saucepan, heat oil over medium heat, cook onions and chili powder, stirring often for five to eight minutes, or until tender.

Coarsely chop tomatoes, add to onions with stock, black beans, corn and spinach. Simmer, stirring often for five to 10 minutes or until slightly thickened. Stir in cilantro.
