1 lb. frozen asparagus, cooked
or 1 can (15 oz.) asparagus; save liquid
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/2 tsp. pepper
1 cup cheddar cheese, shredded
4 eggs, hard-boiled, sliced
1/2 cup cracker crumbs
paprika

Directions:
Directions:
Melt butter; add blended flour, salt and pepper. If using frozen asparagus, add 1-1/2 cups milk. If using canned asparagus, add enough milk to the liquid from the asparagus to make 1-1/2 cups and stir into flour mixture. Cook until thickened, stirring often. Remove from heat. Add cheese; stir until cheese is melted.

In a 2 qt. baking dish, alternate layers of hard-boiled eggs, asparagus and cheese sauce. Cover with cracker crumbs. Sprinkle paprika over crumbs.

Bake at 350º for 40 minutes.
