4 cups (6 oz. bag) fresh baby spinach leaves
6 eggs, well beaten
6 tbsp. (4-cheeses) Mexican style, shredded
8 slices pre-cooked bacon (or fry regular bacon)

Directions:
Directions:
In a sprayed 10" or 12" skillet over medium heat, add 1-1/2 tbsp. water and spinach. Cook until tender, stirring ocasionally. (Note: It may look like a lot of spinach, but this will cook down quickly.)

In a bowl, add remaining ingredients. Pour over spinach; do not stir. Cover with tight lid. Cook until center has set.
