1 lb. carrots, peeled and cut into 1 inch pieces
1/2 cup butter, melted
3 eggs
3/4 cup sugar
3 T. flour
1 tsp. baking powder
1 tsp. vanilla

Directions:
Directions:
Place carrots in medium size pan and cover with water. Bring to a boil and simmer 20 minutes until tender. Drain. Combine all other ingredients in blender. Add carrots, a few at a time. Puree' until smooth. Pour into 8'x8' baking dish. Bake for 45 minutes or until set. Cool for 5 minutes. Sprinkle with powdered sugar. Serve

May double and place in 9"x13" dish. May be made a day ahead. Refrigerate until ready to cook. Great for Thanksgiving. This recipe is from my friend Katie Steele.
