4 c. fresh apples (Pippin or Granny Smith) peeled
2 c. sugar
2 c. flour
1/2 c. vegetable oil
2 t. cinnamon (or more to taste)
1 t. vanilla
2 eggs
1 1/2 t baking soda
1 t. salt
1 c chopped walnuts

Chop apples and pour sugar over top. Let stand
for one hour. Add remaining ingredients and mix together. Pour into a greased 9x13 pan.

Cream Cheese Icing for Apple Cake

1/2 c. margarine or butter, softened
1/2 pkg. powdered sugar
1 t. vanilla
3-4 oz. Philadelphia cream cheese

Beat together and spread on cooled cake.
