4 QUARTS THINNELY SLICED CUCMBERS
6 MEDUIM ONIONS YELLOW OR WHITE THINNELY SLICED
2 BELL PEPPERS THINNLYSLICED
3 CLOVES GARLIC, CHUNKED
CRACKED ICE
5 CUPS SUGAR
3 CUPS APPLE CIDER VINEGAR
2 TBSP MUSTARD SEED
1 1/2 TSP TUMERIC
1 1/2 CELERY SEED

IN LARGE BOWL COMBINE CUKES, ONIONS, PEPPER, GARLIC AND SALT. STIR IN LARGE AMOUNT OF ICE TO COVER. LET STAND 3 HOURS, DRAIN WELL. IN A LARGE KETTLE COMBINE SUGAR, VINEGAR, AND SPICES. ADD DRAINED MIXTURE. BRING TO A BOIL. PACK CUCUMBER MIXTURE AND LIQUID INTO HOT, STERILED PINT JARS, LEAVING 1/2" HEAD SPACE. ADJUST LIDS. PROCESS 10 MINUTES IN A BOILING WATER CANNER.

So YUMMY! Mom would sometimes add cauliflower to this pickle mixture. Getting jars of these in care packages was always a treat. WARNING: once opened it is hard to stop eating these.
