1 1/2 lb. cooked pork
3/4 cup soy sauce
3 tbsp. oil
3 green peppers, cut into strips
1 onion, cut into thin wedges
1 can pineapple chunks, reserving juice
vinegar, cornstarch, sugar - see below

Directions:
Directions:
Combine meat and soy sauce; let stand for 1 hour, stirring occasionally to thoroughly marinate. Heat oil in wok, stir-fry peppers and onions until tender (about 3 minutes.) Remove and set aside. Heat meat and pineapple juice in wok to a boil. Lower heat and simmer 5 minutes. Add pineapple, peppers and onions. Stir-fry 1 minute. Combine 3 tbsp. cornstarch, 1 tbsp. soy sauce, 3 tbsp. vinegar and 1/2 cup sugar with 1/3 cup water. Add to meat mixture and cook, stirring constantly until sauce thickens. Serve over hot rice.
