Tomatoes (fresh from garden preferably)
Whole grain nutty bread
Mozzarella, provolone or Swiss cheese sliced
Mayo
Minced garlic (powder is OK)
Butter

Directions:
Directions:
Spread mayo on one side of two slices of bread. Melt two pads of butter in pan on "very" low heat. Lay bread mayo side up onto melted pools of butter in pan, add sliced tomatoes to one side and a layer of sliced cheese to the other. Spread minced garlic (or sprinkle powder) on tomatoes. Spice with Italian spices to taste, maybe add a little pepper. Cover and set timer for 3 min. Keep checking for when cheese is melted. Make sure you are patient and the heat is low. The tomatoes heat through better when the heat is low, before the bread gets too toasted. Keep checking underneath with a spatula to make sure they don't get overdone. If your heat is low enough you won't burn them. When ready, fold together and serve.

For an added dimension saute some onions and green peppers with the garlic and put that in between too.
