1 large baking apple, cored and thinly sliced
1/2 cup golden raisins
2 tablespoons packed brown sugar
1/2 teaspoon cinnamon
4 eggs
2/3 cup milk
2/3 cup all-purpose flour
2 tablespoons margarine or butter, melted
powdered sugar (optional)

Directions:

350º oven
9 inch pie pan coated with cooking spray

Mix apple, raisins, brown sugar and cinnamon in medium bowl. Put in pie plate.
Bake uncovered 10-15 minutes, until apple begins to soften. Remove from oven.

Increase oven temperature to 450º

Whisk eggs, milk, flour and margarine in medium bowl until blended. Pour batter over apple mixture.

Bake 15 minutes or until pancake is golden brown. Sprinkle with powdered sugar, if desired.
