5 ½ lbs beef tenderloin
¼ cup olive oil
2 Tbsp McCormick Cracked Black Peppercorns
1Tbsp McCormick Cracked Green Peppercorns
1Tbsp McCormick Garlic Powder
1 sm jar creole or spicy brown mustard

Directions:
Directions:
Preheat oven to 325°F. Rub the beef with olive oil, black and green peppercorns, garlic powder, and creole mustard. Cook in large skillet until light brown. Place on rack in a roasting pan. Bake for 40-55 minutes or until desired degree of doneness. If using a meat thermometer, it will register 140°F for rare, 160° for medium, and 170° for well done. To serve, carve beef and serve with béarnaise or bordelaise sauce. I prefer brown mushroom gravy for added flavor!
